We produce “Hamanatto"、that is one of traditional foods in Japan. It is made by fermenting soybeans with koji mold, and is very different from ordinary natto(so called itohiki natto) which has sticky texture and strong smell like ammonia odor. Hamanatto has a black color, a soft quality like raisins and a rich taste like miso. Hamanatto is similar to Chinese fermented black beans, “Douchi”. Beans are mostly dry, but retain some moisture. We have made Hamanatto over 100 years in this area. We are very proud of preserving the tradition. So that we use soybeans only grown in Hokkaido area. And Hamanatto that we make is free from additives chemicals.
