Picked up an amazing knife with a nice rock to it. Since many chef knives tend to stop flat if you try to rock it back and forth to chop it was nice to find a partially North American design. The prices are reasonable and there is a large selection to choose from.

Simply amazing. Shopkeepers did not speak much English at all but still did their best to communicate the important information about their steel qualities and how to care for their knives, and they were so friendly! I picked up five knives for my kitchen and the quality, sharpness and feel is simply incredible and unlike anything I've ever seen or felt. They even dressed us up in a kimono and samurai robe and took pictures of us in the museum before showing us the traditional blade making process. Totally worth the hour bus ride from Nagoya and three knives will last a lifetime! Don't be afraid to drop a grand here because you may never come back and these are the best!

Cutler Sanshu is a must-visit store on your trip to Gifu prefecture. The owner and all staff are very friendly and the quality of the craftsmanship is amazing.
